COLORADO CULINARY CREATIVITY

Blackberry Buttermilk Buckwheat Waffles

Pikes Peak Paradise

Woodland Park, Colorado

1 1/2 cups buckwheat flour

1 1/2 cups buttermilk pancake/waffle mix

2 cups whole milk

3 eggs

4 tablespoons olive oil

8 ounces frozen blackberries or blueberries blended with 1 1/2 cups water

Directions: Mix buckwheat flour, buttermilk mix, milk, eggs and olive oil with a whisk. Blend frozen berries and 1 1/2 cups of water in blender and then add to mix. Cook waffles. Blackberry Buttermilk Waffle mix will last up to one week stored in the refrigerator.

Toppings: Honey, maple syrup, blueberry syrup, fresh strawberries, blackberries, blueberries, raspberries, pine nuts and of cour, whipped cream. Makes 24-28 waffles depending on your waffle maker size.
