Stuffed French Toast with Sautéed Apples
Serves 6
Ingredients:
Filling:
1/2 cup whipped cream cheese
1/4 cup plain yogurt
1/4 cup sugar
French Toast:
4 eggs
3/4 cup heavy cream
1 loaf Sara Lee Artesano Bakery Bread
Topping:
6 Fuji apples , cored, peeled, and sliced - one per person
Vanilla Yogurt or Crème Fraiche
Balsamic Glaze
Directions:
Apples:
Heat one teaspoon butter per apple in a large non-stick sauté pan. Add apples and sauté over a medium low heat until they are beginning to brown. Add maple syrup to coat apples. Add brown sugar as needed to caramelize apples. If additional liquid is needed, add apple juice.
Filling:
Combine whipped cream cheese, yogurt, and sugar.
Making French Toast:
Combine eggs and heavy cream.
Spread about one tablespoon filling on one slice of the bread (per person) and top with an additional slice of bread. Dip stuffed bread into egg mixture (coat liberally) and place on baking sheet pan. Let soak for 10 - 20 minutes. Heat a griddle to medium and coat liberally with butter. Place French toast on griddle. Cook until brown on one side - turn and brown on other side. The French Toast may be prepared ahead of time and kept in the oven loosely covered with tin foil at 170 degrees until ready to be assembled and served. Cut each piece of French toast diagonally in half and stack on an angle over each other. Spoon apples and sauce over toast. Drizzle with balsamic glaze and top with vanilla yogurt or crème fraiche.
