The Bross Hotel Bed & Breakfast is a beautiful 115-year old historic inn on Colorado’s stunning western slope. Innkeepers Suzanne Tripp and Mike Yengling joined the Bross staff as innkeepers in 2020 and took over as owners later that year. As a West Coast native with roots in the Midwest and a Virginian with roots in the Northwest, they somehow seemed destined to settle somewhere in the middle.
Suzanne is a historical architect by training with a background in baking and a lifelong love of cooking. Her keen eye for detail, generosity of spirit, and general love of all things food and hospitality is a natural fit for a B&B. Just don’t ask her for her most prized recipes! Mike, a University of Colorado graduate and organic farmer in a previous life, shares a background in historic preservation that also lends itself to the turn-of-the-century architecture and storied history of the inn. He brings a jack-of-all-trades mentality and is always happy to pass on local knowledge, be it a hike, bike ride, scenic attraction, or offbeat culinary find.

Traditional Corned Beef and Cabbage
3 pounds corned beef brisket with spice packet
10 small red potatoes
5 carrots, peeled and cut into 3-inch pieces
1 large head cabbage, cut into small wedges
Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender.
Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 15 more minutes. Remove meat and let rest 15 minutes.
Place vegetables in a bowl and cover. Add as much broth (cooking liquid reserved in the Dutch oven or large pot) as you want. Slice meat across the grain. Recipe courtesy of allrecipes.com
