Red, White & Blue Cookies - just in time for Independece Day celebrations
We make cookies for all holidays and celebrations.  In fact we bake fresh batches of cookies every single day.  However there is something special about decorating cookies for the 4th of July.  This year we went with a red, white & blue star cookie.  Hope you enjoy them!
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup (1 1/2 sticks)unsalted butter, room temperature
1 cup granulated sugar
1 large egg
1/2 teaspoon lemon extract
zest from one large lemon

Combine the flour, baking powder and salt in a small bowl, whisk.
In a large mixing bowl, beat the butter until creamy with an electric mixer.  Gradually add the sugar while mixing at medium speed until pale and fluffy (approximately 5 minutes - less if using a stand-mixer).  Beat in the egg, lemon extract and the zest until just combined.
Lower speed of the mixer to the slowest setting.  Add flour mixture and mix until just combined.  Do not overmix as this can cause the cookies to be tough.
Form the dough into a circle and wrap in plastic wrap.  Chill dough in refrigerator for a minimum of 2-4 hours.  The dough can be prepared ahead and refrigerated overnight before using.  Sometimes I make the dough and put it in the freezer (double wrapped) until ready to use.
Preheat oven to 350F.  Line two baking sheets with parchment paper.
To roll out dough, lightly flour your counter and rolling pin.  Roll dough to approximately 1/8-1/4 inch.  Cut with cookie cutter of your choice and place on parchment lined baking sheet.
Bake for 10 minutes or until lightly golden.  Let cool on sheet for a couple of minutes then transfer to a cooling rack.
Frost when cookies are completely cooled.
