Tis the Season!
Whew! With Thanksgiving so late this year it feels like Christmas is descending like a freight train! Is it my fault because I won't start the Christmas decorating process until AFTER Thanksgiving? Won't have it any other way!
The elves are pretty much done now, and so our thoughts have turned to baking, and what cookies are going to be the special ones this year. I asked Liz and April what their favorites were from their childhood, and that is what we are going to recreate now. For April, her memories are of pizzelles--so we are planning an evening of classic, chocolate and filled pizzelles. For Liz--well, her severe gluten allergy throws a wrench into the traditional cookie types, so we are working on a flourless chocolate cookie.
For me, I can't decide between two cookies. One is called a "filled cookie" or some recipes call Kolaches. I used to make them with my mother in law; they are time consuming, because you have to roll out the dough into little squares, put in a fruit filling, and fold over opposite corners and bake.
The other is a Polish fried cookie called a Chrusciki, a small knot of dough that is fried and then rolled in powdered sugar. I have hilarious memories of my Dad trying to "help" me make them--he had zero cooking skills, and could only tell me what they were supposed to taste like.
What are your favorites? I will for sure let you know how they all turn out! And Merry Christmas from the three of us!
