We each deal with something less than perfection every day...attitude is 95% of the final outcome...be it positive or negative.
Nothing feels as good as the possession of good "energy"...and when we share that with others, well, that is perfection of the best kind.
October Brings Halloween~
Halloween has origins that go back thousands of years.
Many people, especially Christians, denounce this holiday as having evil and demonic roots.
I believe most of the holidays that we know and celebrate today have roots in a history that had a different meaning or mode of celebration than what we have come to practice and believe.
Halloween is a time of celebration and superstition. It is thought to have originated with the ancient Celtic festival of Samhain, when people would light bonfires and wear costumes to ward off roaming ghosts. In the eighth century, Pope Gregory III designated November 1 as a time to honor all saints and martyrs; the holiday, All Saints’ Day, incorporated some of the traditions of Samhain. The evening before was known as All Hallows’ Eve and later Halloween. Over time, Halloween evolved into a secular, community-based event characterized by child-friendly activities such as trick-or-treating.
While I don’t participate in ghoulish celebrating or waste my energy and expose my spirit to same, I also believe all history is worthy of being studied and considered. It is after all, where we all come from.

Enjoy a delicious winter soup dish while celebrating the holiday~
As surely as the fire glows in fall and winter months, so does the desire for tasty and nourishing foods.
White Baby Pumpkins can be interchanged with winter squash in most any dish.
Summer Squash and Winter Squash are different in texture and taste.
Most Summer Squash can be cooked with the skin because it is tender and thin.
Winter Squash however is thick and the skin will usually be tough and somewhat bitter to the taste. The seeds are bigger and will need to be removed.
Squash Bisque - A New Orleans flavor
1/2 cup fresh, real butter
Melt butter, sauté onion. Add vegetables, stock, salt and pepper.
Cook on med heat, covered, until tender (about 45 min)
Puree in blender-1/2 at a time.
Return to pot and add cream, check seasoning.
Sprinkle with paprika just before serving.

As of late I’ve thought a lot about how little I know about so much I thought I knew. ~
I’ve had things placed in my path that require a leap of faith, now those who know me well, know I am stuck on truth, details, the why’s and what-for’s. Good, bad, indifferent…that is me. I happen to think it is none of those and all of those.
I read a book last year written by Dr. Rashid A. Buttar (Medical Director of the Center for Advanced Medicine). Without a doubt one of the most enlightening books I’ve yet to read. A passage from the book that is so simple and yet so profound has stayed with me.
“Don’t worry about having all the answers for everything. Just step into the unknown with me and accept the challenge. “
I find it is a passage that has no boundaries and is timeless.
In last month’s news I outlined what Sage Hill would not be offering next year. If you missed that, from the website, go into the archives and all the past news is there.
** Now, for something new that will be offered is a venue for your small events.
Birthday parties, small weddings, garden tours, etc…all the details are not in place and those will be shared prior to the spring opening.
**Educational classes will be on a more regular basis and will include some additional topics…those too will come a bit later.
Change is happening and much of it will be on a trial basis…if it works…good. If not…there are options.
