"I perceived that whatever God does endures forever; nothing can be added to it, nor anything taken from it. God has done it, so that people fear before him. That which is, already has been; that which is to be, already has been; and God seeks what has been driven away."~ Eccles. 3:14-15

Modified Elimination Diet: Get Your Healthy On!

Last month, I did a cleanse, monitored by Dillberg Integrated Healthcare, and it was largely based on the Modified Elimination Diet

According to HealthDesigns.com, "[The modified elimination] dietary approach has been most helpful in patients who complain of fatigue, recurrent gastrointestinal problems (especially diarrhea), food intolerance or sensitivity, chemical or environmental sensitivities, chronic headache, and muscle or joint pain of unknown origin."

Are any of those symptoms hitting home with you? Of course, even if you don't feel like you experience these symptoms, it's still beneficial to do a cleanse like this to boost your body's God-given ability to fight disease, sickness, & allergies. Talk to a nutritionist if you're interested in doing a cleanse.

Read about the diet's guidelines here.

Along with modified elimination diet, I juiced fresh veggie juice (low sugar) daily, and took Chinese Medicinal Herbs and high quality Nutritional Supplementation.

Rather than just going on a temporary diet, I try to adopt new positive lifestyle changes. I still cheat every now and then (gotta enjoy the treats I love) - hence the 85% dark chocolate and thanksgiving pumpkin pie!

I believe my health is my choice, which is why I choose to live healthy! Hope this inspires you "get your healthy on!"

RECIPE: Bethany's Christmas Cinnamon Bark Tea with Lemon

Take a few sticks of Cinnamon Bark, place into a pot of Water. Boil 5 mins or so. Turn off & cool to a drinkable temperature. Squeeze in fresh Lemon juice. Drink warm, or chilled!

It's so yummy and you don't need sweetener. But if you do, use Raw Honey or a little organic Apple Juice.

NOTE FROM BETHANY: Merry Christmas! Mud, Make a Wish, & my Modified Elimination Diet.

Hi Friend,
Believe it or not, this month I have been home. Yes, HOME! (haha) It has been extravagant!

This past month has been really great health-wise. I did a month-long cleanse and I've been getting my FIT back on, and surfing of course!

I like traveling, but I don't thrive on it. I guess I've been traveling since I was 13 so it's not new and fresh for me. Don't get me wrong, I love surfing around the world, experiencing new cultures, and meeting people; but it's hard getting on and off planes 2 to 10 times a month!

It's been nice just to have a routine... To see my niece Nanea growing is rad. Spending time with my family. Sleeping in my bed. All the "home" things I miss when I'm gone.

The cleanse was sick (in a good way!), and after a month of eating really clean I feel great! Prior to the cleanse my skin was breaking out and now it has cleared up a lot (still needs to clear a little more). I had inflamation that has gone down. I just feel more energetic. Even though I normally am pretty energetic; I just feel that extra boost.

The cleanse I did was a "Modified Elimination Diet." Read more in my Health Tip section.

As you probably know by now, I'm a health Fanatic. My passion for health is growing. I just see the health of many Americans lacking education and on somewhat of a downward spiral. I believe that my health is my choice. That's why I CHOOSE to live healthy! Hope this inspires you get your "healthy you on."

My mom did the cleanse as well, she's getting her "healthy on."

FIT. Well, I've been training a lot. Last year I was always relying on my trainer Dustin Dillberg, from whom I have learned so much. But lately I have been motivated on my own. I just go in my room put some music on and get my Fit on. I've been TRXing and playing with my yoga ball, Bosu ball and re-befriending my foam roller again. I usually do 30 second sprints.

Just a month of strength training 3x a week with surfing, tennis, and spinning, and I feel so much stronger. It feels good to feel good!

I had a hard time this year keeping my motivation, training, and diet while traveling and having to adjust to the time, environment and schedule changes. It was Crazzyyyyy.

Couple of highlights from November:

I went up to Koke'e with some of the North Shore high school youth of Kauai. It was a retreat in the mountains and it was rad. I had sooo much fun! We had great Bible studies and went on a good hike called Alaka'i Swamp. We did a mud bath, hehe (see photos!), and it was just fun being a kid. I love hanging with the kids. When I was in high school I was blessed to have awesome leaders who influenced me to make good decisions which had an impact on me for the rest of my life. Choices like: choosing to live for Christ, avoiding drugs and alcohol (which have a pretty strong influence on the youth of Kauai), saving my purity for marriage (believing that there is such a thing as a beautiful marriage that can survive for all of my life!), etc. I just feel blessed. I hope to bless the younger generation on Kauai in a way that I was blessed at their age.

I had to leave camp early but for a great reason! I got to hang with three adorable girls from Make A Wish: Maddie, Lizzy and Gina. We hung out at the pool of their hotel; I took them to a spot for me to surf so they could play in the shoreline and watch; then we all went surfing and they ripped it up! They got a private surf lesson from my surf coach Russell Lewis. It was so fun for me to watch them, wade in the water while they surfed, and help assist in the lesson! I really adored Lizzy, Maddie, and Gina and am hoping for the best for their health! Miss and love you girls!

The other day I took my mom out on our jet ski! Kawasaki gave me a ski about 5 years ago and my mom has wanted to go out on it since. So we loaded it up and got her out on it! But before we even got outside the channel, we ran out of gas. hahaha. Out of control! Won't ever do that again! #AmateurHour (: But still it was a lot of fun!

I'm home all of December; just going to be doing my thing and figuring out my intentions and goals for next year!

Wishing you and your family a joyful Christmas!

Be blessed and bless others,

Bethany

Surf Student hosts screening of Soul Surfer with Walking on Water
Foothills Baptist Church, Phoenix, Arizona
“After seeing the Soul Surfer film and reading Bethany’s book, I was so stoked on her story in a way that moved me to recommit my life to God. I remember exactly where I was when I prayed for God to use me like he used Bethany.” These are the words of Sierra Ullrich, a 17 year old girl from Walking on Water's summer surf camp who hosted a Soul Surfer screening at her church in Phoenix, Arizona last month. Sierra shares, “At camp it hit me that the reason I was there was because of Soul Surfer and when Bryan challenged us to do an event I HAD to. I had this feeling of ‘I can’t keep this to myself.’" In taking Bryan’s challenge to organize an outreach event with the film, Sierra raised the needed funds and flew out actress Sonya Balmores-Chung who plays fictional competitive surfer, Malina Birch in Soul Surfer. On event night, 300 plus people showed up to watch Soul Surfer and hear the Gospel message! Host an Outreach
