How to Spatchcock a Turkey.... in the Rain! Thanks to all the folks
who braved last Sunday's downpour to enjoy Mick Vann's lecture. A
good time was had by all, and we are grateful to master chef Mick
for sharing his time, his knowledge... and his turkeys with us.

Trees aplenty: the nursery has plenty of all of the oaks, Bradford pears
and crepe myrtles. 15 gallon trees are $125, and 30 gallon trees
$239. We will transport and plant them in your garden for half the cost
of the tree.

                 The Onion Season

The season to plant onions has arrived. And not a minute too soon for
me! In Texas, with our hot summers and our slightly cooler falls and
winters, success with onions begins with choice of the right varieties.
Look for short-day onion seedlings or 'sets' as they are called.

One of Texas’s legendary onions is the Texas 1015Y Super Sweet.
“1015Y” means 10th month, 15th day, and “Y” means yellow. This is the
sow date for this wonderfully sweet onion. Some prefer to eat them like
an apple or freshly sliced as a side to any dish.

Short day onions grow vegetatively during the short days of fall and winter,
and reach their maximum size in the longer days of late winter and spring,
when they finish their life cycle by blooming. There are some other splendid
onions to choose from also. Some of my favorites include:  

Contessa- white version of 1015Y. This sweet, globe shaped onion
matures in 100 days and has the same sweetness as its yellow cousin

Southern Belle Red: globe shaped sweet red onion that matures in 110
days. It has better storage characteristics due to its lower water content.

White Bermuda:  heirloom variety from the Bermuda islands. This sweet,
flat, white onion matures in 95 days and is an excellent candidate for
garden green onions. They can produce a nice scallion in just 30 days.

Take advantage of the weather and plant some of these wonderful onions.
Now is the perfect time. Remember, the earlier you plant, the bigger they
