News1: Tita partners with the Indian Film Festival The Hague

The Indian Film Festival The Hague Holland, is a platform for contemporary film art from India for established and rising film talent. The festival explores the changing identity of India through the eyes of film makers.  Five days of cinema, five days of eclectic and exciting programming, five days of mesmerizing India for all ages and all kinds. Whether you’re a lover of art, food or nightlife the Indian FFTH has something for you. As a primary event partner of the Indian Film Festival Hague, Tita Impex will be responsible for providing authentic Indian cuisine to the 5000 discerning event goers. The 'Tita Kitchen' will be located in the Pathé Buitenhof movie theatre for the 5 day duration of the event. The Head chef from Mumbai India, promises to serve a wide array of authentic Indian meals, prepared lovingly with Tita ImpEx Spices. Food tasting days are a great way to introduce authentic Indian food and spices to your customers. The events are also a great way to engage with your customers and provide them with an additional reason to visit your shop.

The Head Chef, will create a range of tasty Indian recipes, bring them to your outlet and share them with your customers over the period of a day, he
 will introduce the different spices, explain how they are used, provide cooking tips and also give away some free easy to cook recipes. You can even make money on the day by selling some spice packages and who knows, your customers might enjoy the spices so much you may decide to stock some.

Spotlight:Singing the Praises of Tita Spices

From his earlierst days in Mumbai India, Mr. Singh was always a big fan of food. Attaining a degree in hotel management from the Institute of Hotel Management Bombay he completed his chef training at the prestigious Ashok Group Hotel in New Delhi.
His culinary skillls and natural flair for creative and authentic Indian cusine did not go unnoticed and on completion of training he was contracted by the
Bombay Palace Group to begin work in London UK. After a 3 year stint, a chance meeting with an Arabian dignatory provided the opportunity to move to Spain and run a restaurant. His authentic creations quickly became an instant success with the well heeled UK expat community in the Costa del Sol and Mr Singhs love affair with the Coast began.
In 1993 Mr Singh opened Little India in Calahonda his first privately owned restaurant. From day one the focus was to provide an authentic taste. The menu was heavily influenced by Mr. Singhs home, the Province of Punjab, ''where food is prepared in the old ways, using the freshest ground spices, in an effort to create the perfect sauces''.
After marrying a local spanish lady and with the assistance of his new brother in laws Mr. Singh opened two more international restaurants, Little Italy and Little Mexico.  Though the food was different, the focus always stayed the same, authentic taste...

So what's the secret to a great Indian meal. According to Mr. Singh, ''cooking a great meal is a lot of hard work, because you have to start from zero everytime''. ''It is important to select the right ingredients and make sure they are fresh, you have to be conscious while you are cooking and  think about the time that you will need to let things marinate and how you will finally serve the food''.

What would you say to someone who has never tried Indian food? ''There are a lot of people who never tried Indian food, because they think it´s too heavy or spicey'' states Mr Singh. ''Indian food is from very mild to very hot, same as the Tita spices, so you can choose''. ''And secondly Indian food is very very healthy, many of the spices we use have medicinal properties, for example cumin, coriander or turmeric mixed with milk for example is being used to cure various internal diseases''. So now we know, a curry a day keeps the doctor away!
As a true professional in his field, Mr. Singh has used many spice ingredients over the years, so how does he rate Tita Spices. ''When I use Tita Spices, I can smell India'', he says lovingly. ''These are very fresh spices ground by stone, which is the traditional way''. ''Also, most of the time when you buy spices you never actually know where they are from or how old they are. ''I know that if the spice is from India, the flavour is at it fullest, the quality is always high and the price is always low'', he says with a wry smile.

Recipe of the Month: Fish Tandoori
Indian is among the leading cuisines of the world. Diverse, delicious and not as difficult to cook as you might think.You shouldn't be intimidated by Indian recipes - it's very possible to replicate your favorite dishes at home! Now's as good a time as any to get started. With Tita Spices from Tita ImpEx, Indian cooking is easy, fun and delicious.

So let's get started with a healthy Fish Tandoori.

4 tablespoons Tita Fish Tandoori masala
4 medium-sized firm fish fillets of choice (for example Tilapia)
1/2 cup plain yogurt
2 tablespoons fresh lemon juice
1 tablespoon minced garlic
1 tablespoon peeled and grated or crushed ginger root
2 teaspoons salt, or to taste
Vegetable oil, for brushing
Fresh coriander for garnish
Slices of cucumber, (red) onion, tomato and lemon, for garnish
Step 1
Prick the fish fillets gently all over with a fork to allow the marinade to penetrate. Place the fish in a large, shallow dish you can use in the oven.

Step 2
In a separate bowl combine the Tita Tandoori mix, yogurt, lemon juice, garlic, ginger and salt. Stir until well-mixed, then pour the mixture over the fish and rub it into the fish, turning the fish several times. Cover and refrigerate for a couple of hours or overnight. Remove the fish from the refrigerator at least 30 minutes before cooking.

Step 3
Preheat the oven to 220 degrees. Brush the fish with oil and place it in the oven. Cook the fish, turning once, 20 minutes until the juices run clear and until slightly charred on the second side.

Serve with sprigs of coriander and slices of cucumber, (red) onion, tomato and lemon. You can serve this dish with Pilau Rice, Basmati Rice and any of the other (vegetable) dishes you can find on our website. www.titaimpex.com
