OUR PRAYERS CONTINUE FOR THOSE WHO LOST LOVED ONES AND

FOR THOSE WHO LOST HOMES DURING THE APRIL STORMS!!!!  

The storms have passed but North Alabama will long remember the "once in a lifetime" experience of these storms and their aftermath.  The effort to regain a "normal" life has begun but that recovery will toke time, great effort, continued support and many prayers.  During the initial days following those storms Longing For Home was able to provide refuge for a few who were most impacted. 

When you are ready for a break and need a place of grace to renew your minds and regain your strength, Betty and I invite you to come and experience the peace and quiet that is Longing For Home.  Reserve a two day stay and receive a $25 gas card to help cover your travel costs. 

Remember to send, by June 15, your photos, original recipes and uplifting quotes that you want to share with us and those that receive our June 2011 newsletter.  If you have stories from the recent storms that you want to share send those as well.

 

Fresh News for the Month: With Spring 2011 well underway the opportunities to search for, find, experience and enjoy unique events and places all across North Alabama are many.  During May/June this year here are just a few:

"The Miracle Worker" - Playwright William Gibson's epic drama is performed on the grounds of Ivy Green each year on weekends from early June through mid July. Celebrating 50 years of outdoor performances at the Bust of Hellen Kellerbirthplace of "America's First Lady of Courage," the play will carry you into the daily disappointments and then the "miraculous" breakthrough of young Helen Keller at the guidance of her teacher, Anne Sullivan. The Helen Keller Festival (23-26 June 2011) - A Must See! 

The UNA Front Porch Storytelling Festival (20-21 May 2011). Within an easy drive from Longing For Home, the main storytelling venue is the Memorial Ampitheatre in the heart of UNA's beautiful campus.  Come enjoy a few days of great stories and make a few of your own.

Rogersville Heritage Day (4 June 2011).  Come celebrate our southern heritage.  The theme this year is the "Year of Music" and with great bands, great food and a wide range of events you are sure to have a great time.  On the 1st Saturday of each month come enjoy music and shopping in "Olde Town" Rogersville.

Singing in the Square (3rd Friday April through September).  The historic Athens downtown square comes alive with live entertainment.  Music lovers are encouraged to bring their lawn chairs for a casual good time.  Genres of music include bluegrass, folk, christian, gospel and easy listening.

Athens Alabama Historic Walking Tour (4,11,18,& 25 June 2011). This year walkers may choose from four different walking tours that highlight unique aspect of historical Athens.

34th Alabama Jubilee Hot Air Balloon Classic will be held at Decatur Point Mallard Park 28-30 May 2011.    

Pontoon boat tours of the Tennessee River . May - Oct 2011 - a great experience in the beauties of Wheeler Lake.

Recipe of the Month: This dish is a favorite among our guests this year.  This simple dish, when brings great aroma and taste to our breakfast table.  Even the He-Man will love this breakfast main dish. 

Italian Eggs

1 small zucchini, halved lengthwise and thinly sliced  Italian Eggs

1 medium red onion chopped (1/2 cup)

1/2 cup chopped red or green sweet pepper

2 cloves of garlic, minced

2 teaspoons olive oil or cooking oil

5-6 eggs

1 cup fat-free milk

1/4 teaspoon dried italian seasoning, crushed

1/4 cup shredded mozzarlla cheese (1 once)

Directions

1. Cook zucchini, onion, sweet pepper, and garlic in hot oil in a medium skillet until onion is tender; cool slightly. 

2. Combine eggs, milk and italian seasoning in a medium mixing bowl; mix well. 

3. Stir in cooked vegetables.  Pour into four individual (about 4 and 1/2 inch diameter) quiche dishes or shallow casseroles.

4. Bake at 350 degrees (F) oven for 30-35 minutes or until set. 

5. Sprinkle each serving with mozzarella cheese. 

6. Let stand 5 minutes before serving.  Makes 4 servings
