During this time of COVID-19, Blue Skies Inn has designed a two-two-two way to stay. Two days are left empty in a room before a guest stay, the guest stays at least two days, then the room is blocked another two days for it to “cool off” if anyone has traveled while sick. That is the only technique the innkeepers could add to their usual O.C.D. cleaning regimen! The inn was designed many years ago so that each suite has its own HVAC system - air doesn’t mix between suites. So until a vaccine is developed for the current virus, it will be two-two-two all the time at Blue Skies Inn. Breakfast has always been served as room service to each guest’s door, and that is still the way that a hot breakfast is delivered. A picnic basket with fresh fruit, a hot egg dish, freshly-baked muffins, coffee, juice and milk is packaged in disposable one-use containers. That way, a basket can be taken on a picnic to the woods or enjoyed in a personal sitting room while wearing one’s jammies!
Stay 3 with 1 free or 2 with 2nd 1/2 off special discounts through November at Holden House 1902 Bed & Breakfast Inn in Colorado Springs. Stay any nights of the week for 3 or more nights and get one night free or stay Sunday-Thursday for 2 or more nights and receive the 2nd night 1/2 off. Pumpkin Spice Cookies
1 cup shortening, butter or margarine
1 cup sugar
½ of 16-oz can of pumpkin (approximately 1 cup)
1 egg
1 tsp vanilla
2 cups flour
1 tsp baking powder
1 tsp ground cinnamon
½ tsp baking soda
½ tsp ground nutmeg
½ tsp salt
¼ tsp ground allspice
1 cup raisins (optional)
½ cup chopped nuts (walnuts/pecans-optional)
Cream shortening and sugar. Add pumpkin, eggs and vanilla and beat well. Stir together flour, baking powder, baking soda, salt and spices. Add to shortening and sugar mixture and fold in raisins and nuts if desired. Drop by rounded teaspoonful 2 inches apart on greased cookie sheet. Bake in preheated oven at 350 degrees for 12 to 15 minutes and cool on rack. Makes 3-4 dozen.
