What Is AN Herb? Or is it URB ? It's both or either, depending on where you live. In the Commonwealth English it's "hurb" and in American English it's pronounced "URB". So, take your pick and know that you are correct either way.

In botany an herb is a green leafy plant that dies back to the ground at the end of the growing season. (or something close to that).

In my book it's a green leafy plant grown for culinary, medicinal, or spiritual value.

My interest is all three, but I specialize in "culinary"... cooking with herbs is a delightful experience that you never get tired of. Many, many, ways to use herbs in the preparation of foods that lends itself to "joy" of cooking.

Some herb information that you may or may not be aware of.

In a study done by the U.S.D.A., scientist tested the antioxidant capacity of 27 culinary herbs and 12 medicinal herbs all under the same conditions. They found many to be ounce for ounce more potent than fruits or vegetables.

Three varieties of oregano, including Italian, showed the most antioxidant activity of the herbs analyzed-higher than vitamin E. Sweet bay, dill, winter savory and coriander also showed impressive antioxidant capacity.

Herbs are broken down into 3 levels in the culinary arena.

(Mild) parsley, chives, chervil, and mint.
(Medium) basil, tarragon, thyme, and oregano.
(Strong) rosemary, bay leaf, and sage.

If you are new to using herbs, my suggestion is to start with the milder ones and graduate to the others when you are comfortable with the understanding.
