St. Augustine's Original Chocolate Tour

Every Saturday from January 8th through February 22nd Learn the history of chocolate and chocolate formation while sampling truffles, pastries and gooey delights from the finest chocolatiers on this exciting tour presented by Old Town Trolleys. The tour includes stops and samples at Raintree Restaurant, Hilton Bayfront Aviles Restaurant, Casa Monica Hotel, Claude’s Chocolates, Peterbrooke’s Chocolates, and St. Augustine’s original chocolatier, Whetstone’s Chocolates.

  • Jan 8th - Twelfth Night Ball - Relive the old tradition of celebrating the Feast of the Epiphany with a costume ball at St. Augustine’s Government House. This is the Ball for Gentry and Common Man at the St. Augustine Government House at the west end of the Plaza de la Constitucion. Participants must be dressed in 18th century costume of any nation, as well as bring one pot luck dish and wine, if so desired. Each attendee should also provide his or her own antique plate and eating utensils. Turkey, ham and punch will be served.

  • Jan 22nd - The Swings the Thing - Celebrate a vibrant moment in St. Augustine's history when German saboteurs and submarines were at our beaches and the Coast Guard replaced our town's tourist economy.  This big band concert and swing dance will be headlined by the acclaimed 18 piece Florida Swing Orchestra, with highlights such as a stirring "Tribute to Our Armed Forces" and an opening floor demonstration of the evolution of swing dance.

Recipes and Tips

New Cookbook Request:  We have about a dozen new recipes, but we need more as we put together the second cookbook that features the best family recipes from our guests here at the Carriage Way.  The cookbook will have one recipe on a page and we would like you to provide a short story that complements the recipe.  Send us only your best and if we print your recipe, we will send you a complimentary copy. A Big Thank you goes out to Linda for her submission of their traditional Christmas morning coffee ring.

Twice a year including New Years Day, John makes his barbecue beef brisket.  Rain or shine it doesn't matter, because it is cooked inside.

John's Favorite Brisket

1-1/2 tsp. of salt

1-1/2 tsp. of pepper

2 T. chili powder

1 tsp. bay leaves, crushed

2 T. Liquid Smoke

4 lbs. Beef Brisket, first cut

Combine salt, pepper, chile powder and bay leaves and set aside. Rub meat completely with Liquid Smoke. Place meat, fat side up, in a large roasting pan. Sprinkle dry seasoning mixture on top. Cover tightly with aluminum foil.  Bake for 4 hours at 325 degrees.  Scrape seasoning off meat and cut in very thin slices, across the grain. Serve with barbecue sauce.

Cleaning tip:  I like to make up my own barbecue sauce and store it in the refrigerator.  In order to keep your plastic containers from getting stained from the tomato base, rub the inside with vegetable oil before placing the sauce in the container.

The St. Augustine Celtic Music and Arts Festival will be here March 11th - 17th.

Some of the greatest living musicians, artists, writers and poets from Ireland, the US and the Celtic region of Spain, will converge in this wonderfully romantic city for a week long celebration to honor the great traditions of music, literature, dance and all things Celtic.

Artists include: Hevia, Benny O'Carroll's Band, Black 47, Rathkeltair, 7 Nations, Wobbly Toms, Michael Funge, Pipe & Drum Corp,  4Men and a Dog, Dublin City Ramblers, Pat Coldrick, Timmy the Brit-Irish Set Dancing, Hugh O'Neill, Sean Murphy, Le Bradshaw, Cian O"Morain, Derek Coghlan

St. Patrick's Day Parade will be Saturday March 12th at 10 a.m.
